Auburn Culinary Center / Jalapeno Popper Bites
« Last post by Snakebite on April 22, 2025, 12:30:54 PM »Seen't this one on the Instagrams and gave it a go a few weeks back. I will make it several more times when football season rolls around. Instructions below:
1. 2 - Ritz crackers with cream cheese spread on each.
2. 1 - Jalapeno slice sandwiched between them.
3. Thick cut bacon cut in half and folded over the Ritz cracker sammich.
4. Doust the bacon with your favorite BBQ rub.
5. Place on your grill/smoker (indirect heat) at 250 degrees and let it go until the bacon is crispy.
6. Baste with your favorite BBQ sauce and let it smoke for another 5 or 10 minutes, until caramelized.
7. Grab a plate, napkin, a beer, and enjoy.

He does an excellent job in Fallout, too. Very much enjoyed that show.
I never got into Justified, but I have heard good things on that show also.

Got to take my youngest and his buddy down to the game Saturday night. The place was packed and the atmosphere was great.
Went to A Day, then downtown for a few hours, then headed up to the top of the garage to watch that same game you were at. Was an awesome atmosphere up there all day.
