Believe it or not I like 'em without tomato and lettuce. I prefer mayo, provolone cheese and plenty of gravy for dipping. I had one last night, homemade. I use Parasol's recipe. I added about a tablespoon of Kosher salt to mine.

Agree, a "wet" sandwich shouldn't have lettuce and tomato. Peppers and cheese maybe.

Been to Parasol's in the Big Easy. By far the best roast beef po boy I've ever eaten in my life. Actually went there after seeing it on "Diners, Drive-ins, and Dives" on the Food Network. The place is an absolute shithole, though. If you go into the bathroom, you will be overcome with the urge to add vomit to the shit stains that are already on the wall.

Best Po-Boy in New Orleans PERIOD is Parran's in Metairie. Roast Beef, Oyster, Catfish... don't matter. They are still in the speed dial of my phone - when we were driving from Houston to NOLA every damn weekend for wedding planning, it was not a complete weekend without a trip to Parran's.
Best Muffalatta is Central Grocery. Hell, they invented it... I have dreams about their olive salad mix... :wartim:

I'm much more partial to Short Stop in Metairie. It was biking distance from my grandmother's house.
