Title: Wrong Way Fish

Anyone love the flavor of the fish who just has to go against the grain....salmon?  Hey stupid fish, it's much easier to go WITH the current and the bears can't get you if you do that and stop jumping.....but I digress.

Never been a huge fan of the salmon.  Those fried salmon patties were a staple of our diet growing up since my moms cooked them all the time.  Okay with ketchup but they stink the place up for hours.  Found something simple and incredibly good at of all places, Pube-Licks.  As I've said earlier, finding fresh fish is really tough when your choices are limited to Publix and Winn Dixie for the most part.  But we found some "Bourbon Glazed Salmon" filets at Publix that are pretty darn skippy.

Quick, easy recipe and cooking time.  The filets already have a good seasoning but we mix up some soy and brown sugar, pour that over the filet, wrap it in foil and bake it for 20 minutes at 400.   :thumsup:

I love salmon.

Use an ovenproof skillet -

Preheat oven to 450

Salt and pepper fresh salmon filets.
Heat olive oil and butter in skillet at high heat (1/2 olive oil, 1/2 butter - it's not a deep fry but you want more than just a coating of the pan

Once the butter melts and the pan is hot, add salmon skin side up

Cook for 4 minutes

Flip

Spoon oil/butter mixture over top of salmon

Put skillet in oven for 6 minutes

Perfecto.

I do something similar.  Last year at my checkup my doc says bad cholesterol was really low, but so was the good, told me to eat salmon once a week.  Fine by me.

I buy the fresh stuff for a gazillions dollars a pound when I can, but honestly the individually wrapped frozen fillets from Costco are really good for the price.  Pull one out, run it under cold water for 10 minutes to defrost and fry it up like THS medium rare.  Excellent.

Try cooking your fish (any fish) on a cedar plank on the grill.  Soak the plank for at least a couple of hours, fire up your grill, put a pan of water on the grill, place the cedar on AFoil and let cook for about 30 minutes.

No, do not turn your fish- I put the water tin on one burner and the Plank on another and close the lid-It cooks slow and the size of your fish will determine how long to cook.

Cedar Planks-Yes you can buy them in a store, if you can, find a place that uses cedar in its daily activities they will give planks for free.

Cedar in your closet is also good for keeping moths at bay.

You can use any hardwood planks, just make sure they are untreated.  If they are thick enough you can even reuse them a few times.

Gives it a flavor.  But any wood that isn't resinous will do.  If you can find some hickory slabs.... #winning.  Another option that I've always wanted to try is the Alton Brown cardboard box smoker and a whole side of salmon.

I use a cast iron skillet for my salmon like THS and AUT2.       
Picked it up from some fancy chef out of the old Birmingham Magazine in the nineties.

* Was also barraged with salmon patties as a youngster.
Anyway, the following recipe for sauce is served at the French Laundry and I add 3 TBL of orange marmalade to mine. No complaints yet!

Orange Juice Sauce Recipe for Fish
Ingredients

1 cup orange juice
2 tbs soy sauce
1-2 tablespoons butter
Procedure

Reduce the orange juice in a small pot for 15-20 minutes or until the juice is reduced by half. Add the soy sauce and swirl in the butter. Serve warm.

To me it gives it a cedar smoke taste that I like and you don't have to fool with flipping the fish.

Plus I have all the free cedar I can use.

Never liked Salmon.  Looks tasty as hell.  Ought to be.  Could not get what everybody loved about it.  People look at you funny when you say you don't like it.  Everybody likes it they say.  I don't, and finally a judge I know said the same thing.  He didn't get it either.  He said, "It looks good, but you simply cannot cook the Salmon taste out of it!"  My thoughts exactly, until...

I was at Surin 280, and ordering my Sashimi, and was pondering what else I wanted after the Maguro (Tuna).  The waiter suggested Salmon, and I told him I hated it.  Asked me if I'd ever eaten it sashimi.  Nope.  I tried it.  I loved it.  So, judge was wrong.  Cooking intensifies the flavor and I don't like it.  I love it raw, and eat it frequently like that.

I don't like salmon either. It, along with liver, are my kryptonite.

A few weeks ago, I went to one of those Chinese, Japanese - fuck it, they all look alike - restaurants, and tried that salmon sashimi. I didn't care for it either.

I'll eat the fuck out of trout or practically any other species of fish, but I just can't hang with salmon.

Ate the salmon from the original recipe in this thread last night.  I'm like several of you in that salmon, for the most part, just doesn't appeal to me.  Most times, it has that very distinct flavor that you either love or can't stand.  For some reason, that particular recipe seems to overpower that flavor and it's pretty dang skippy. I think you have to start with the Pube-Licks bourbon glazed version though.

Not gonna dispute what you say, but a good size Chilean Sea bass steak, (with or without stuffed with fresh crab) is hard to beat.

Oh snap....per. That's a damn fine looking haul.  How long is the season this year?  2 days?

Trying to get up a trip in 3 weeks. I need to look and see if snapper will still be in.  They have really cut fishing for snapper to about null and void.

Season open through July 14. Actually will give some over lap into grouper season. The snapper are every where. Left Pensacola Bch dock at 8 am. Beers and cocktauis prepared and lines wet at 9:30 had 7, including a 38 inch, on board by 10:15. 7 fishers so only had 14 limit and we hadn't even finished our 1st beers. So we rode slow for couple more hours caught a few more and finished up at 1st hole.

So 2 is the limit?  I would imagine as much as they've been regulated the past few years, they should be plentiful.  The boat Captains have been singing the blues...at least the few I've talked to.  Good to hear it's through 7-14.  I feel better about our trip.

Very nice.  That did look like one heck of a ride though.  I had been seasick several times early on in life and as you and anyone else who has been there/done that knows....very few worse things in life than a good session of seasickness.  When I did my first sailfishing trip, I knew I would be on the water for 3 straight days and was really worried I'd ruin my trip if I got seasick.  Got a Rx for the patches (Can't spell the name) and I'll swear by those things.  I never take anything resembling an ocean fishing trip without a patch. Had I gone on what you just showed without one, everyone on that boat would have come back covered in Snagglechunks.

Taking the wife deep sea fishing for the first time next week, I plan on fishing-drinking-drinking-watching her fish and hopefully laughing my ass off if she hooks something that can put up a good fight.

Had I gone on what you just showed without one, everyone on that boat would have come back covered in Snagglechunks.

I remember hearing interviews with WW2 vets where they asked them how could they run into machine gun fire from a small landing craft.  The universal answer was that they were so seasick they didn't care if they lived or died, just as long as they got off that boat.  I always thought that was BS until that day.

 So I started to walk into the water. I won't lie to you, boys, I was terrified! But I pressed on - and as I made my way past the breakers, a strange calm came over me. I don't know if it was divine intervention or the kinship of all living things, but I tell you, Jerry, at that moment - I was a Marine Biologist! ...The sea was angry that day, my friends, like an old man trying to send back soup in a deli! I got about fifty feet out and suddenly, the great beast appeared before me. I tell ya, he was ten stories high if he was a foot. As if sensing my presence, he let out a great bellow. I said, "Easy big fella!" And then, as I watched him struggling, I realized that something was obstructing its breathing. From where I was standing I could see directly into the eye of the great fish!

Okay,I admit. This was 1st fishing trip in 23 yrs I've lived here. I have sailed across Gulf and back...twice. Never got sea sick. Both times after getting on land was the worst 48 hours of my life. I'm a pussy.

Not exactly true.  We don't travel once a month here like we used to.  We travel about once a year to Co and Cali.  I may not be up on the travel rotation for a while though since I am the new guy.

Its really good for cooking fish, the wood heats up and cooks the bottom so you don't ever have to turn your fish.
