Nothing unique.  We'll all get liquored up and pass out just like every other year.

No, the food is always pretty traditional.  Turkey, dressing, giblet gravy, turnip greens and other sides.  Must have pecan pie afterward.

I guess tradition for us is that different people have a specialty that they are asked to bring.  Also the head of household offers the Thanksgiving blessing which is expected to be a little more in depth than "God is great, God is good".  This year it is at my house as our baby is due literally any day now so it will be my turn.

I usually get asked to fry a turkey, but this year I am firing up the smoker.

Smoked Turkey
Ham
Sage Cornbread dressing w/ giblet gravy
Green bean casserole
Sweet potato casserole (my wife's specialty, I eat it three times a day for leftovers until it is gone)
Assorted corn, peas, beans, etc. from the garden
Biscuits
Cornbread
Green Rice (rice, broccoli, and cheese cooked together; a request I make of my mother every year at Thanksgiving)
Hummingbird Cake (my mother-in-law's specialty; if you've never had one it is a cinnamon layer cake with pineapple, pecans, and banana with cream cheese icing; very healthy).

No food traditions, but it's not a Thanksgiving without playing some Rook, Spades and Hearts after the dinner table is cleared and Maw-Maw's team waxing the table with anyone who dares challenges.


Turkey, Ham, Broccoli Casserole, Hashbrown Casserole, Mac and Cheese, Dressing, Gravy, Green Beans, Sweet Potato Casserole, 7 layer salad, Rolls, Cornbread, sweet tea, pies and cakes.  Too many desserts to list.

I love this day! Greatest day of the year!  Spend some time with the family, eat until you are miserable, watch some fooseball, nap, wake up and graze some more, get miserable, watch some more fooseball, no worries about presents.........................Thanksgiving >>>>>>> Christmas.

Sweet Tea until I get home, I would never, ever take a drink in front of Maw-Maw, I don't know that her heart could take it.   When I get home, get the kid to bed, I will start in on "Real Whiskey", you know, the stuff that comes from Kentucky and give thanks in my own little way.

From the innerwebbs: Between 1100 and 1300, distillation started in Ireland with monastic distilleries existing in Ireland in the 12th century. Since the islands had few grapes with which to make wine, barley beer was used instead, resulting in the development of whiskey.

Any other process that skews from the original is merely a variation of the "real whiskey". Corn is for Taco Shells and Shepherds Pie! And those 2 are Mmmmm Mmmmm good too.

BTDub - On a serious note, I did have a few glasses of Michael Collins and ice Sunday evening. Oh so good.....very hard to find. There are some American "Whiskey Products" that I do like, and SoCo is one of them. Nothing like some original fermented southern peach goodness! Makers isn't bad either. Have you tried the Jim Beam Red Stag yet? I see it advertised at the Bar and Grills around here and haven't mustered up the fortitude to try for fear of wasting my monies.

I like SoCo especially when mixed with Juicy Juice....yeah, you read that right.  Last year I was cutting SoCo with coke.  It's blended already and doesn't taste that good straight to me, so what the hell.  I grew a pussy like Snaggletiger did and mixed it with coke.   I ran out of coke product, my neighbors kid drinks Juicy Juice, I ask if I can try to mix with that and it was delicious.  Weird I know.

I am a Jameson and Bushmills kind of man when it comes to the Irish stuff. I keep a bottle of Jameson on hand.  Jameson on ice with a splash of water and green food coloring on St. Patricks Day.  My grandfather would beat my ass if he knew how much more I liked Bourbon instead of Irish Whiskey.

Typical Thanksgiving foods for me as well. One of the things that I don't like is that stupid ass Fruit Salad that some dumb ass always makes and is always thrown away. I think this year we'll be having the Deep Fried Turkey. Thats some good shit. I'm loving the turnips too along with the Deviled eggs. Its my way of getting back at those little snarling or bragging comments from other family members; without even saying a word.

The whiskeys, well it all depends on which family we visit; mine or hers. My side is all about some Ir'sh whiskey in the later hours or Bourbons with dessert. I'm not really a SoC guy but Wild Turkey is the shiznit for the Holidays. It helps you express how you really feel.

My favorites are any of those that start with "Well, your fucking mother.........." or if she is within earshot and you are talking to someone else, "My damn mother in law....."  Those always go over well with the wife and others in the room.

Anyone else sick of Thanksgiving food?

Perhaps you all are better cooks than my parents and my in-laws, but I had to put my foot down this year.  Thanksgiving is happening at my house. 

Therefore, we're having a fresh turkey from Whole Foods that will be brined before roasted.

Of course, we'll still have the typical dressing from my mother and the typical boiled green beans and ham from my mother-in-law.  And the sweet potato casserole that only has "200 calories per serving!"  Which is the annual story we get from her.

And then overcooked pumpkin pie that's had its fat content reduced with a light, olive oil pie crust.   

And my parents frown upon drinking.  They tolerate it, but they act quiet and usually go home early if liquor is involved.  They're usually cool with other people having one glass of wine with dinner. 

Oh, and my wife's brothers refuse to come home for Thanksgiving, and I'm an only child.  So it's my wife, my in-laws, and my parents.  It's like any other dinner during the year except there's a fuckton of food that I don't really care for.

But enough negativity.  This is why I'm taking over Thanksgiving, and I need ideas.  Maybe if I make all of the food, I can convince extended family to fly in.  "Want the best fucking turkey you've ever had in your life?  Come over for Thanksgiving."

Its a potato. If it has 200 calories a serving, then a serving is a bite. Otherwise, that shit is tofu.

Exactly why I insisted on it being at my house.  I figured I'd ease them in slowly.  This year will be normal with turkey done my way and me providing appetizers and a dessert.

Next year a bit more.

Have any of you tried the Wild Turkey Honey?  IMO it's not too bad, and Snaggs won't need to mix it with teh coke products.

I like to cook as well.  I think that is why I volunteer my house so much for all our neighborhood gatherings.  It's a good feeling when you look around and see people laughing and having a good time.  That is a great sign the food is good.  If the food is shitty, it gets really quiet and people stare at one another with that "Damn" look on their face.

Sounds like you have it planned out.  It's what I would do.

Just an aside, this past Sunday my buddy's wife and kids were all out of town.  For no apparent reason, he decided to just spend the day cooking up a bunch of meat and watch football...and NICECAR.  He replaced his Weber in his man-pit with The Egg and decided to do some experimenting. Grilled wings up first, using the main marinade as some Emeril's chicken rub. That was truly bad ass.  He also had a Boston Butt and a huge brisket going/  Had all the coals on one side and the meat on the other. 

I about passed out from the smell. THIS would be my kind of Thanksgiving meal.

one of the drawbacks to living in the northwest is ...not being close enough to the grandparents or parents for the way thanksgiving should be "southern style". 

the skirt, growing up and down the west coast, has a much smaller family...and their thanksgiving is just not like home in georgia.   i've tried to bring in some of the southern comfort foods but with much resistance. 

it will be the smallest crowd at thanksgiving for me since i can ever remember.  the skirt's mom past away @ 56 this past spring, her sister will not be there ...so it's 5 of us, the dog and the neighbors dog. 

i am not sure of the menu but i'll be involved with the turkey, drinks and dessert.

the turkey will be smoked using hickory pellets on the traeger.  it will be in a brine for 24 hours, then coated with some sort of rub and stuffed with apples and oranges. 

the dessert...will be a pumpkin/pecan cheesecake recipe stolen from southern living magazine. 

drinks...pre-meal, most likely will be a bloody mary while getting things prepared in the morning.  smoking the turkey drink will be some sort of whiskey and dinner will be served most likely with a local riesling.   afterwards, more whiskey.

Have no idea on the brining question.  A turkey is one bird I've never tackled in the kitchen, except on my plate.

I'm like the nookster, this will be a very small gathering.  Most of the family won't be able to make it in town.  The only plus is that for the first time, we're having it at our house so I can follow AUT1's plan above.  Eat, drink, watch football, eat some more, nap, get up, eat, drink and watch some more football.  No drive home.

you know i don't know...i'm not sure why i typed 24 hours.  i've done this 3 times before...each time was overnight...most likely in the 6 to 9 hour range.  my mistake.

Alton Brown is the god of brining meat products.  Here is one for the smoker

Mom, Brother, Me, and one of my brother's friends, his wife and their kids in from out of town.

Menu:

Appetizer/Pre-meal munchies:

Deviled Eggs:  I make them with Duke's Mayo, a little mustard, dill relish, season with salt, pepper and garnish with Paprika.   

Pimento Cheese stuffed celery. I make this.  This is traditional...it was one of my dads "must haves".   Until recently, had to make my own Pimento Cheese, but a new product out called "Palmetto Cheese" makes that task obsolete.  All previous commercially made Pimento Cheese products sucked hind tit.  Palmetto is teh roxxors, and they even make one with jalapeno's added, and one with bacon bits added. 

Had to take over both these duties from Grandmom.



Main Menu:

Turkey: (Smoked)  I prefer roasted, but my brother wins out here most every year.  He does the work.

Glazed Ham:  Why?  I guess for a change of pace, or maybe for the leftover ham sammiches.  I love ham, but love turkey more, and you can have ham anytime, and even prefer the leftover turkey sammich. 

Dressing: cornbread, no sage, mom hates it.  It's made in the bottom part of that broiler pan that comes with an oven when you buy it. (Tradition)  It's deeper in the middle, and my brother likes his dressing soggy, and I like the crusty edges.  Brother makes this. 

Squash Casserole.  I cook this

Sweet Potato Casserole:  Pecans and brown sugar on top, NO MARSHMALLOWS!  I make this.

Green Beans, seasoned with bacon of course. 

Giblet gravy.  YUM! 

Cranberry sauce. 

"Green Jell-o Surprise":  Traditional side dish from my grandmother.  Green Jello, Cool Whip, chopped pecans, crushed pineapple, and little marshmallows make up this little jello treat that is served on a side dish on a piece of lettuce.   (may leave this off though)

Dessert:

Pecan Pie.  I will make this. 

Grandmom used to make my fave, Coconut Cake, but she's no longer able, and I can't find her recipe.

This man knows.  My folks have 6 pecan trees so we get all the pecans we can handle gratis.  My mom roasts the pecans with butter and salt prior to putting on the brown sugar and using with the casserole.  That little bit of salty mixed with the brown sugar makes me question why we even bother with putting the sweet potatoes underneath.

Can you brine turkey for 24 hours without it being rubbery? 

I thought 6-8 hours was the limit.  This is my first year doing this, so I'm only going by the internet.
TH be very careful with the salt. A Paula Deen recipe fucked up three lbs. of raw peanuts I was planning to boil with her silly-assed measurements. I had to dredge those suckers over and over again. Always read the comments that follow.
I cook too. I make enough dressing to freeze. Exes parents were from northeast and the food always blew. Make T'giving yours brother. Just roll out the spread with five or six courses and there isn't much anyone can say. It's all good, even better when they cease and desist with that shit.

Operation "Smokey Bird" is underway.  Just threw a small 4lb breast on the smoker.  It should be done about 11'ish.  I will slice it up tonight and then tomorrow before we eat, I will pour a little creole butter injection that I have made extra, pour in a pan and warm it up in that to keep from drying out.

- My phone rings at 5:30am.  It's my father.

"You need to get up."
"What?  Why?"
"You need to get the turkey ready."
"We aren't eating until 2 an...."
"Doesn't matter.  (chuckles) Look, I know you think you've 'got this' but just listen to someone who has done this many times."
"It's in a brine, Dad.  Won't take as long as a non-brined turkey."
"Whatever.  Guess we'll eat at 5 or 6." 

- Phone rings a few minutes ago. It's my mother-in-law. 

"Hey!"
"Hey!  Happy Thanksgiving!"
"Hey!  You there?"
"Hey!  Yeah I'm here.  Can you hear me?"
"Hey!  Hey!  You here?  Hello?  Helloooo?!"
"We must have a bad connection."
"Hey!  (Calls to her husband) I can hear him, but how do I know if he can hear me?"

"Sorry!  I don't know how these cordless phones work."
"You mean a cell phone?"
"Yeah.  Just got one."

"(Sigh) Hi."
"Do you want us to bring some more wine?  We don't want you to have to open any more wine."
"No.  The only thing I forgot is eggnog.  Do you have any?"
"No.  No.  No no no.  We don't drink that stuff."
"Oh.  Ok.  Well, I gue...."
"Do you?  It's really heavy.  Are you going to be drinking it because we can bring something else for ourselves."
"No.  I don't have any, so it's no bi...."
"Is your mother making her usual dressing?"
"Yeah."
"Oh. Well.  I'll guess we'll have a little bit.  She makes it so heavy."
"Ok."
"Maybe next year I can make the dressing."
"Ok.  See you later."

The tension was high when they all arrived.  Scowls.  Frowns.  Incredulity at its peak.

Then I pulled the bird from the roaster.  It sat for 30 minutes.  I carved it perfectly.  Put it out on a platter so that the pictures were nice. 

We said grace.  They began to eat the turkey.  And all was quiet for the first half of dinner.

Everything went well from then on.  It was a good Thanksgiving. 

I'm fucking tired.  Hosting Thanksgiving is hard.

My first try at pecan pie was a success.  Ok, I cheated, didn't make the pie shell.  Hit Publix the night before @ 9 pm, and find that Light Corn Syrup is like liquid gold on Thanksgiving, and sold out.  I'm forced to endure Walmart.  Literally, obtained the last bottle of Karo Light Corn Syrup in stock.   I used a few more pecans than the recipe called for, but fuck sakes, it's a PECAN PIE!  The recipe said cook 10 minutes on 400, then dial back to 350 for 35 to 40 minutes, and that you should be able to stick a knife in the center and draw it back out clean...no you fucking can't.  Got worried I fucked something up. It's really puffing up in the middle, not like any pecan pie I've ever seen, and it's not set firm.  I put a piece of foil over it, because it's getting real brown, and go 5 more minutes.  I call my mom and inquire if it will set as it cools, she says yes.  So, I pull it out, and set it on the counter, and whaddayaknow, in 10 minutes, that thing deflates, and sets firm, just like it should.  Toasty brown, nutty, sweet goodness.   It, and my sweet potato casserole were big hits.

Helping my brother with last minute prep, and my fave, giblit gravy, and I've chopped the eggs and giblits to go in it, and I hit the pantry looking for cornstarch...none.  I ask bro, "where's the corn starch"?  He says, I realized this morning I didn't have any, I'll just make a slurry using flour.  "Uh, no, you can't use raw flour the same as corn starch, you got make a roux"  Makes a quick roux, adds it, and says "it's not thickening like it should".  I say "Let it boil dumbass, it doesn't thicken til it boils".  Few minutes of simmering and we got gravy, and a damn fine meal.

It was a pretty good Thanksgiving.

My first smoked turkey turned out to be a great success.  Brined for 12 hours in 1/2 gallon water, 1 qt of chicken broth, 1/2 pound salt, and 1/2 pound honey.  Smoked for 4.5 hours (14.5 pound bird).  Turned out perfect, everyone raved over how juicy it turned out.
