Title: Did It Again
Post by: Snaggletiger on April 23, 2012, 09:51:40 AM
I have had the good fortune the last few weeks of hitting on killer recipes and cooking up something awesome.  Last night, it was beer-butt chicken.  The recipe came out of The Big Green Egg cookbook and I can't imagine chicken being any better.  The marinate is a rub that consists of:

1 teaspoon each of:
brown sugar
paprika
chili powder
dried mustard
onion powder
1/4 teaspoon cayenne pepper
1 tablespoon Kosher sea salt

Coat the bird thoroughly and shove half a beer up its ass and put on the grill' keeping the heat around 375 for an hour.  In a spray bottle, mix up beer, apple cider and balsamic vinegar.  Keep sraying the bird constantly throughout the cooking.  That's it.

Served with cole slaw and rosemary new potatoes.  Just cut the new potatoes in half...coat them in butter, EVOO and fresh rosemary.  Bake them til done.

Hate that you are late to the party.  This has been a staple since sophomore year at Auburn....circa 1996.

I've had beer in the bird's ass numerous times.  It was just something about this recipe that was off chizad

Would that chicken recipe work in the oven?

I only have a gas grill, and it doesn't do long-term cooking well at all.
