Sorry.  Once again, i am a Southern slaw purist.

Carrots, jullienne

Cabbage, green, chopped

Mayo/Generous pinch of salt/Three+ tbsp sugar - to taste, but enough to coat carrots and cabbage thoroughly

That is all.

Now, I make a mean broccoli salad as well...

Chopped broccoli (She's Chopping Broccoli!!)

Shredded Sharp Cheddar Cheese

Crumbled REAL bacon

Dressing is made of mayo, sugar, and vinegar.  Start with 1/2 cup mayo, 2 tbsp of vinegar, 1 cup sugar, then mix, taste, and add more of whatever is lacking.  The result is a sweet and tangy mix... yummy.  Pour over the broccoli - it tastes better if you prepare ahead of time - just let it sit in the fridge overnight.  Add bacon and cheese right before you serve.  You can also add walnuts, chopped red onions, raisins, dried cranberries, or whatever suits your fancy.

I love potato salad as a side more than anything.  The wife makes a few different variations, all of which are great.  I love some slaw too.  Preferably hot slaw or mustard slaw.

Im with this man on the tater salad.
