Coach Luper deserves some credit

If you haven't heard him speak, which I'm sure all of you have, you need to.  Even Alabama fans gotta admit that he's someone you listen to when he speaks.

citrus baked chicken

1 whole roasting chicken
1 lemon
1 onion
celery
carrot
olive oil 
salt/pepper

preheat oven to 450.
rinse chicken and pat dry
rub chix down w olive oil inside and out, salt and pepper skin and cavity.   put lemon quarters, onion quarters, celery stalk, and carrot stalk in cavity.  in baking pan, roast 15 min at 450, turn heat down to 350, bake @ 45 min more, or until skin is brown, and instant read thermometer reads 165 in thigh.
