Copying a Restaurant

I had a spanish salmon dish at Dodiyos (awesome restaurant in Homewood), and I tried to recreate it tonight.  I pretty much nailed it.  Thought I would share.  

Salmon San Martin

1 lb of fresh caught salmon (whole foods was great) cut however you want
1 orange, zested plus 1 more orange for juicing
1 lemon, zested
3 medium sized shallots, sliced
Two tablespoons olive oil plus two more tablespoons
Capers
Sliced Almonds, toasted
Salt and pepper

Oven on 400
1.  Put first two tablespoons of olive oil in a large glass bowl.
2.  Add orange and lemon zest
3.  Juice the two oranges and lemon into the bowl
4.  Whisk together
5.  Add salmon and coat...let sit for a few minutes
6.  Coat an aluminum pie pan with remaining two tablespoons of olive oil
7.  Place salmon in pie pan
8.  Heavily salt and pepper the salmon pieces
9.  Add marinade and shallots around the salmon
10.  Bake for 20 minutes, covered with aluminum foil
11.  Remove from oven.  Change oven to your highest broiler setting and remove aluminum foil.
12.  Add capers to the top of the salmon
13.  Broil for 2-3 minutes and remove from oven
14.  Garnish with almonds
15.  Serve in small deep plates and add the leftover juice and shallots over the fish

Amazing what these people think of when it comes to food....

Looks good, Town.

I'd like to see someone "nail" the Bang Bang Shrimp from Bone Fish.

That shoot is fudgeing awesome.

I might as well live in a restaurant the way we've been cooking the past few days....  You all can enjoy this one.

Townhall's Carbonara

1lb of spaghetti pasta
Salt
5 pieces of good sized bacon slices
5 garlic cloves, finely chopped
1 cup parmesan reggiano, grated
A big handful of fresh parsley leaves, chopped
4 eggs, beaten
1 lemon, zested
Pepper

1.  Cook pasta in a large pot with lots of water and 2-3 tablespoons of sea salt.  Try to time this so when you get to step 7, you'll be just finishing the pasta.
2.  Fry bacon in a very large saucepan.  Render fat until bacon is crisp.  Remove bacon from pan but leave drippings.
3.  While the bacon is frying, mix half of the cheese with the eggs and add lemon zest.  Set aside.
4.  To the bacon fat, add garlic.  Turn down heat to medium low. 
5.  While garlic is browning, chop the leftover bacon.
6.  Add half of the parsely and the chopped bacon to the pan.
7.  Drain the pasta and add to the saucepan.  Toss so that most of the bacon fat, bacon, parsley, and garlic gets incorporated into the pasta. **Important - Remove pan from heat.
8.  Let pan sit for about 30 seconds, then carefully add the egg/cheese mixture to the pasta. 
9.  Stir quickly and be sure to not scramble the eggs.
10.  Add remaining cheese, parsley, and juice from the lemon.
11.  Stir and add pepper to taste.
12.  Devour.  Cabernet Sauvignon worked well with this. 

We eat well at the Townhall home.

1 cup diced ripe Roma (plum) tomatoes

How to cook it:
1. Heat 2 tablespoonos of the oil in a large skillet and saute the onion for about 4 minutes over medium-high heat. Add the garlic and saute 2 minutes longer.
2. Add the squash and zucchini and saute 5 minuts longer, until softened.
3. Add the remaining 1 to 2 tablespoons of oil with the corn, scallions, and chiles and saute 3 minutes longer.
4. Stir in the tomatoes, cilantro, and cream (if desired) and heat through, about 5 minutes.
5. Top with cheese. Serve hot or warm.

Not sure if this is what they use, but when ive seen them make it before they simply put a freaking mixture (looked like powder) into a machine and in 1 hour -  Frosty.

So says the new Sonic commercial as well.

Serious? Havent seen that one. But could be something to it. Could it be that our beloved Frosties are nothing but ~gulp~  - Frozen Powder? NOOOOOOOO!!

I could have sworn that I used to make home made ice cream at my grand parents house back in the day with milk and other "powders". I had no idea I was eating homemade frozen powder. I was tricked...those bastards...

You made homemade ice cream with instant powder? Yes - you were tricked!

We always used butter, vanilla extract, sugar, eggs, etc - and as always dont forgot the morton salt and ice.
